I one has a pistachio and pear cake that was so delicious I looked for recipes. The best I could find was this one by Nigella which sounds delicious even though I don’t like rose flavoured anything. https://www.nigella.com/recipes/pear-pistachio-and-rose-cake I am decidedly Not A Baker so this was all pure fantasy for me but might be up your street!

I've just had coconut cake at Wiverton Hall cafe Bkskeney in Norfolk. It was a scrumptious light sponge made with dessicated coconut and with dessicated coconut in the butter cream. I also think this would be nice with a subtle lemon flavour with the coconut πŸ˜‹πŸ˜‹πŸ˜‹

That does sound delicious! Sadly BMB (who is otherwise faultless) dislikes coconut. But I could always make two cakes...
